“"Yamataro" is a local dialect term for the Japanese mitten crab (Eriocheir japonica) or river crab (Eriocheir japonica), which has long been valued and eaten by local residents as a precious source of protein in the autumn. They inhabit even the deepest mountain streams and are caught by trap fishing from autumn to winter when they descend the rivers to spawn. Japanese mitten crabs can be eaten boiled in salt water, or added to miso soup or hot pot with vegetables and tofu, allowing the crab's umami flavor to seep into the broth, resulting in a rich and flavorful dish.
