Miyazaki Prefecture's only sake brewery, "Sentoku Sake Brewery" (Nobeoka City), is offering a limited-edition "Rich and Unrivaled Sentoku Sake Manju" (six pieces) for 1,000 yen (tax included) to commemorate their annual brewery open house.
The following is quoted from the website of "Kaze no Kashi Torahiko".
[Annual Brewery Open House Commemoration] Sentoku Sake Manju
"Not a single drop of water is used."
This confection is made once a year to commemorate the brewery's open house, using dough prepared with sake lees and cloudy sake from Nobeoka's local sake, "Sentoku," to encase Torahiko's strained red bean paste, and then steamed.
This is "Sentoku Sake Manju".
"There are many places throughout Japan that make sake manju (steamed buns filled with sweet bean paste and sake)."
Most of them use sake lees or amazake as a base, and so far, none of the sake manju I've eaten have satisfied me.
Therefore, in a completely unconventional way, we tried our own unique method of preparing the dough for our sake manju (steamed buns filled with sake), using not only sake lees but also Sentoku's nigori sake (a cloudy sake that is pressed using a coarse pressing bag and still retains a rich rice flavor). This is how the current Sentoku sake manju was created.
This is a very fragrant, luxurious sake-flavored steamed bun.
